Asian Pork Mince with Brown Rice and Chia

Ingredients

500 grams pork mince
1/4 wombok slices fine
6 asparagus hopped in half
1/2 head broccoli stalks finely chopped and florets broken into bite sized pieces 
1/2 cup green beans.
1 brown onion sliced finely
Ginger to taste (I used about 1cm size piece)
Garlic 2-4 cloves sliced
2 tablespoons soy sauce 
1 tablespoons sweet chilli sauce 
3 tablespoons hoisin sauce
1 lime juiced
2 kaffir lime leaves
1/2 lemongrass
1 tablespoons seasame oil
1 salt reduced chicken stock pod 
1 serve of brown rice & chia (sunrise) 

Toppings 

1/4 cup salted peanuts chopped
1/4 cup fried shallots
1 Spring Onion finely sliced 

Fry onions, garlic, ginger in sesame oil until soft, add pork mince and brown.
Add all other ingredients (not toppings) and cook stirring often for 15-20 minutes or until the vegies are cooked to your liking. 
Top with spring onion, peanuts and fried shallots. 
To add a little extra protein add a crispy fried egg to the dish to make it 286 cals, 17.6 carbs and 21 protein.
Also to drop the carb level leave the rice out or substitute it for cauliflower rice.
