500 grams chicken mince
2 onions finely diced
3 garlic cloves crushed
1/2 red capsicum diced
1/2 green capsicum diced
1 teaspoon grated ginger
1 tablespoon sesame oil
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon sweet chilli sauce
1/4 cup peanuts chopped roughly
3 tablespoon protein peanut butter
1 can lite coconut cream
1 salt reduced chicken stock pot
6 sheets filo
Fry onions, garlic capsicum and ginger in sesame oil, once onions are soft add chicken mince and brown.
Once chicken is brown add all other ingredients except water, bring to boil and reduce heat. Simmer for 20 minutes stirring often.
If the sauce is very thick add small amounts of water until it’s your desired consistency.
Transfer to a baking dish and cool.
Once cooled top with crunched up filo sheets. Spray with oil spray and top with black sesame seeds (optional).
Bake in a 180 degree oven for 20 minutes or until brown and crunchy x
