Lemon & Bacon Risotto – Thermomix Recipe

Ingredients

1/2 red onion

3 garlic cloves

4 shortcut rashers of bacon

2 lemons

1 teaspoon sumac

1 teaspoon garlic powder

2 teaspoons tarragon

1 1/2 cups Arborio rice

1 continental chicken stock pot

1/4 cup parmesan cheese

1/2 cup cottage cheese

2 scoops feel good protein powder

2 cups water

120 grams spinach

Chop onion and garlic in thermomix, add bacon and process until just chopped.
 
Add whisk and cook at 100 degrees for 4 minutes on speed 1.
 
Add stock pot, the juice of 1 lemon, sumac, garlic powder and rice and cook for a further 2 mins.
 
Add 2 cups of water and cook on varoma for 10 mins.
 
Add tarragon, protein powder and cottage cheese and cook for a further 10 mins.
 
Once cooked add the spinach and parmesan and cook for about 1 more minute.
 
Serve.
