1 cup oats
3/4 cup wholemeal flour
1 tablespoon stevia
1 tablespoon baking powder
2 scoops vanilla protein powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons coconut oil melted
1/2 cup unsweetened almond milk
1/4 teaspoon salt
1/4 cup no shu sugar free white choc chips
1/4 cup low sugar cranberries
1/4 cup pepitas
Mix together oats, flour, stevia, baking powder, cinnamon, nutmeg, salt, choc chips, pepitas & cranberries in a medium bowl.
Add the egg, almond milk and melted coconut oil and stir until just incorporated.
Place 15 even sized balls onto a lined baking tray and flatten slightly, bake in a 180 degree oven for 9-11 minutes. They will still be soft in the centre when they come out of the oven DO NOT OVER COOK THEM!!
