Ingredients

BREAD

2 Eggs

1/2 cup almond meal 

1 Tablespoon Monkfruit sweetener (or your fav granular sweetener)

1 Tablespoon sugar free maple syrup

1 Tablespoon Bec’s Christmas Dessert Hemp Seed Sprinkles

1/2 Tablespoon melted coconut oil

1/2 teaspoon baking powder

 

CUSTARD

2 Eggs

1 Tablespoon monkfruit sweetener

1/4 cup lite cream

1/2 cup lite milk

Tiny pinch of salt

1 Tablespoon vanilla extract

1 scoop vanilla protein powder (tasteless will work but add more vanilla and more sweetener)

 

Preheat oven to 180 degrees.

BREAD

 

Mix all ingredients in a large mug and place in microwave for 2-2.5 minutes.

 

Remove from microwave and allow to cool.

 

Run a knife around the edge of the mug and turn the bread out. Cut into bite sized pieces and divide between 3 small ramikins.

 

CUSTARD

Place all ingredients in a bowl and whisk well to ensure there are no lumps from the protein powder.

Pour over bread and place in oven on a tray. Bake at 180 for 10-15 minutes, then turn oven down to 150 and bake for a further 5-10 minutes.

You want the mixture to be not quiet set when you remove it from the oven as it will continue to cook on standing.

 

Top with walnuts & dried cranberries and drizzle with a little extra sugar free maple syrup.

 

Options – you could add sugar free choc chips & frozen cherries….or chocolate with orange zest….diced apple with a little extra cinnamon….diced frozen banana….the options are endless.
