Ingredients
1/4 cup tricolored quinoa cooked according to the packet direction (with stock and garlic cloved added to water. Once cooked remove the garlic clove)
1 1/2 tablespoons cottage cheese
1 tablespoon Bec’s Hemp Seed Sprinkle Italian Herbs
1 tablespoon chopped fresh chives
Bacon & Avocado Salsa
1 Short cut bacon cooked until golden and finely diced
1/8th of an avocado finely diced
1 tablespoon red onion finely diced
1 teaspoon lemon juice
1 teaspoon garlic olive oil
While quinoa is cooking gently mix together all salsa ingredients and check for seasoning.
Once Quinoa is cooked, over a low heat add cottage cheese, hemp seed sprinkle and 3/4 of the chives and cook until cottage cheese melts.
While quinoa is still hot plate up, top with salsa and enjoy xx
