Ingredients
250 grams lean beef mince
1/2 packet of taco seasoning (I make my own taco seasoning but packet is fine)
1/2 cup taco sauce
1/4 cup diced capsicum
1/4 cup diced tomatoes
6 eggs
1 small onion diced
Add onion to a non stick pan and fry until soft. Add taco mix and mince and cook until brown.
Add 1/4 cup taco sauce and continue to cook for 10 minutes.
Cool In a bowl add all other ingredients and combine well.
Once mince is cool add to egg mixture and divide between a 24 mini muffin pan that you have sprayed with oil spray.
Bake in a 140 degree oven for 25-30 minutes of until set.
Optional serve with sour cream extra taco sauce and diced avo.

This will freeze well and can alternatively be made into a slice.
