Mexican Baked Eggs with Mountain Bread Dippers

17  – add a scoop of protein powder to the tomatoes to add extra protein.

Ingredients

1 egg

2 tablespoons Becs Mexican Hemp Seed Sprinkles

1/4 cup diced tinned tomatoes

2 tablespoons Parmesan 

1 Mountain Bread Wrap

 

To a very small non stick frying pan add tomatoes and 1 1/2 tablespoons ofhemp seed sprinkle and stir.

 

Over a medium heat bring to the boil, make a well in the tomatoes and crack your egg. Top with 1/2 of the parmesan and place under a grill on high.

 

While egg cooks sprinkle mountain bread with remaining cheese and sprinkle and place under the grill until just turning brown and crispy.

 

Eggs are cooked once they have lost their “wobble” usually takes around 8-10 minutes.

 

Optional topping – sour cream, taco sauce, guacamole, diced avo, spring onion etc etc
