Kale Caesar salad

Ingredients

1 bunch kale
2 rashers bacon
4 tablespoons full fat good quality caeser salad dressing
Juice of 1 lemon
3 boiled eggs
2 tablespoons nutritional yeast or Parmesan cheese
2 slices grainy bread
1 teaspoon oil
2 spring onions
Salt and pepper to taste

Finely cut the kale, diced bacon and cook until crispy while the bacon is warms add it to the kale.

Rip bread into small chunks and toss in olive oil, 1/2 the nutritional yeast (or Parmesan) and salt and pepper. Place in a 180 degree oven until crispy

Mix the dressing and lemon juice together and add to the salad along with spring onion the other half 1/2 nutritional yeast (or Parmesan cheese). Mix together and top with diced egg and crispy croutons.

Although this probably is as calorific as normal caeser salad it’s full of good nutrients in the kale and the nutritional yeast.
