1 teaspoon milk
1 teaspoon cottage cheese
1 teaspoon chopped fresh chives
1 teaspoon Bec’s Chive & Onion Hemp Seed Sprinkle (or plain hemp seeds)
20 grams short cut bacon diced
20 grams of Moira Mac’s BBQ chicken (or chicken of your choice)
20 grams grated cheese
1/2 teaspoon olive oil
1 teaspoon reduced sugar BBQ sauce
In a small non stick pan fry bacon until browned.
While bacon is frying whisk together all egg mixture ingredients until cottage cheese in incorporated.
Set aside bacon and wipe out pan, return pan to a medium heat and add olive oil
Add egg mixture and gently stir until it starts to set then spread out to cover bottom of pan.
Add topping to one side of the omelette and flip opposite side. Turn pan off and leave the omelette sitting in the pan for a few minutes to allow the cheese to melt.
Serve topped with your fav herbs or salad greens.
