Ingredients
1 egg
1/4 cup Philadelphia light cream for cooking
1 shortcut bacon diced
1 clove garlic crushed
1 tablespoon Parmesan cheese finely grated
20 grams cooked spinach (thawed frozen is fine)
1/4 cup cannellini beans (optional)
Add garlic and bacon to a pan with a tiny bit of spray oil and cook for 2 mins.
Add philly, Parmesan, beans and spinach and cook on a high heat for 5-8 minutes until it starts to thicken, take off heat and crack in egg.
Cover with foil and place in a 180 degree oven for 8-10 minutes or cooked to your liking.
***the white can still be runny if you don’t like it pop under a grill for a minute.
Sprinkle over your fav soft herbs and serve while piping hot xxx
